Green peas or Garden Peas are nutrient-dense, green seeds found in hard pods. They have a slightly sweet taste due to their starch content. Taste wonderful in soups and salads.

Peas are starchy, but high in fiber, protein, vitamin A, Vitamin B6, vitamin C, vitamin K, phosphorus, magnesium, copper, iron, zinc and Lutein. Dry weight is about one-quarter protein and one-quarter sugar. Pea seed peptide fractions have less ability to scavenge free radicals than Gluthatione, but greater ability to chelate metals and inhibit linoleic acid oxidation.
What makes peas unique from other vegetables is their high protein content. For example, 170 grams of cooked carrots has only 1 gram of protein, while 170 grams of peas contains four times that amount. Green peas are fairly low in calories and contain several vitamins, minerals and antioxidants. They’re also high in fiber and protein.
