Step 1: Use a vegetable spiralizer to make thick spiral noodles of zucchini and beetroot. Place the zucchini noodles and beetroot noodles in bowls.
Step 2: Add garlic dressing, salt, pepper and lemon juice to the noodles and gently toss. You can refrigerate the noodles until they are ready to serve later.
Step 3: Before serving, garnish with parsley and sunflower seeds. Serve immediately.
