  • Step 1: In a medium bowl add chickpeas, minced onion, chopped bell pepper, 2 cucumber [chopped], parsley, lemon juice, dill, salt and garlic dressing and mix thoroughly. The longer you allow them to marinate the more intense the flavour will be!

  • Step 2: Using a spiralizer or tool of choice curl one cucumber and 4 large carrots into raw spiral noodles. Add 2 tablespoons of honey to the salad and mix well.

  • Step 3: Top with extra chopped parsley and a hearty sprinkle of roasted seeds.
