  • Step 1: Peel and wash the potato and carrots. Wash the other vegetables and cut all the vegetables along with potatoes and carots in to small pieces. Chop the leek into julienne and celery into small pieces.

  • Step 2: In a pan put the oil or butter and saute the leek for 5 mins in low flame, add the cut vegetables to the pan and saute for 10 mins till the vegetables are soft, add some vegetable/chicken stock or water and the marjoram and cover the pan and let it simmer for 30 mins, till the vegetables are cooked. Add salt and pepper to taste.

  • Step 3: Garnish with chopped parsley, and serve hot in soup bowls. Mushrooms or chicken may also be added to this soup as per choice.
