INGREDIENTS
3 TBSP fresh lemon juice
1/4 tsp salt [plus extra, to taste]
1/8 tsp dill
2 cups chickpeas [canned or cooked from dry]
1 cup chopped red or yellow bell pepper
1/4 cup finely minced onion
2 TBSP honey
GUIDE / INSTRUCTIONS
Step 1: In a medium bowl add chickpeas, minced onion, chopped bell pepper, 2 cucumber [chopped], parsley, lemon juice, dill, salt and garlic dressing and mix thoroughly. The longer you allow them to marinate the more intense the flavour will be!
Step 2: Using a spiralizer or tool of choice curl one cucumber and 4 large carrots into raw spiral noodles. Add 2 tablespoons of honey to the salad and mix well.
Step 3: Top with extra chopped parsley and a hearty sprinkle of roasted seeds.
