INGREDIENTS
4 tblsp olive oil, plus more as needed
2 onions diced
2-3 garlic minced
1 medium eggplant diced
1 small stick of fresh thyme leaves
1 small stick of fresh marjoram leaves
1 green bell pepper diced
1 red bell pepper diced
Salt and pepper
GUIDE / INSTRUCTIONS
Step 1: Add a tsp salt to the eggplant and set aside.Set a large pan over medium heat and add the olive oil,once hot, add garlic, thyme and marjoram leaves and saute.
Step 2: Add the onions and cook them stirring occasionally, until they are wilted and lightly caramelized, about 5 to 7 minutes. Drain the excess water from the eggplant and add it to the pan and continue to cook, until the eggplant is partially cooked, about 5 minutes.
Step 3: Add the green and red peppers, zucchini, mushrooms and continue to cook for an additional 5 minutes. Add the tomato puree, basil, parsley, and salt and pepper, to taste, and cook for 5 minutes. Stir well to blend and serve hot with rice.
