INGREDIENTS
1 Onion
150g Yoghurt
Pinch of Pepper
Half teaspoon Salt
3 table spoon Lemon Juice
1 teaspoon sugar
GUIDE / INSTRUCTIONS
Step 1: Wash and cut the cucumbers in small cubes and put in a bowl. Do not peel them as 1) most of the vitamins are directly under the skin and 2) it adds fibres and colour to your dish. Wash and cut the Parsley and basil in small pieces
Step 2: Open a jar of GreenTokri mayonnaise and pour it in a litre jug (FYI GreenTokri mayonnaise contains eggs). Fill the (not completely) empty mayonnaise glass 3/4 with yoghurt and 4 table spoons of lemon juice, close the jar and shake well to use the mayonnaise that was still on the side of the jar
Step 3: Open again and add ½ teaspoon of salt and a pinch of pepper and 1 teaspoon of sugar, shake again and pour it in the litre jug. Add the cut basil and parsley to the jug and mix with an egg beater. Pour the content of the jug over the cucumber salad, toss and keep in the fridge for 20 min before serving.
