Step 1: Pierce the cleaned potatoes with a fork and boil them for 10-15 minutes till they are just about cooked.
Step 2: Cut each potato lengthwise in half; scoop out the insides in a medium bowl leaving a very thin shell.
Step 3: Add milk to the potatoes and mash using a potato masher. Stir in milk, sundried tomatoes, basil pesto and cheese (you may add salt and pepper to taste).
Step 4: Fill potato shells with mashed potato mixture. Bake them for about 15 minutes. Sprinkle with basil, additional cheese and enjoy!
